Talking tequila with Sammy Hagar
From the Kitchen of the 225 Club

Astronomers have recently determined that our own Chief Troll’s bodily circumference is twice that of rocker Sammy Hagar’s. See for yourself in the picture here.
 
The globe-trotting rocker and the basement-dwelling slacker got together backstage before Hagar’s recent gig at Gillette Stadium in Foxboro, Mass.
 
Hagar, of course, makes a series of tequilas under the Cabo Wabo label. Hagar’s people contacted the Chief before the gig, apparently aware that he consumes alcohol the way other humans breath in oxygen, and aware that he has numerous outlets in which to discuss his favorite elixirs.
 
Turns out that Cabo Wabo is really top-notch stuff. Let’s put it this way: if your idea of tequila is pounding shooters off some chick's cleavage – which we do encourage, by the way – then pick up something as cheap as the girls you hang out with.
 
Cabo Wabo, instead, is some top-shelf sipping stuff, starting with its basic Blanco and moving up the ladder to its aged Reposado, Anejo and then its new Uno – each one aged (in American oak whiskey barrels) longer and priced higher than the other. It's meant to be consumed more like cognac, or mixed into some high-end cocktails. 
 
Hagar, by the way, was really cool. He and his manager put together a whole spread for our chubby leader (in LeAnn Rimes' dressing room, by the way, who was also on the bill). They swirled sips of Cabo Wabo in large burgundy glasses and just shot the breeze about what makes great tequila. (You can see the whole story behind his tequila here.)
 
Hagar has always been into tequila but, he said, "I used to drink a lot of rot-gut when I was younger." He said he still downs two shots of tequila before heading on stage.
 
He was a cool, down-to-earth dude – and even shared some of his tequila recipes with us. Here’s one below for pan-seared scallops with tequila and lime served at his Cabo Wabo Cantinas. We’ll add some of his cocktail recipes soon.
 
In typical CHFF fashion, the story ended badly: the Tubby One was arrested later that evening for stalking Rimes outside her dressing room. He said the Reposado made him do it.
 
Sammy Hagar’s Pan-Seared Sea Scallops with Tequila and Lime
8 large sea scallops
Salt and pepper to taste
1 T. olive oil
1 garlic clove, sliced thin
1 oz. Cabo Wabo Reposado Tequila
1 lime, juiced
1 T. parsley, chopped
1 T. unsalted butter
 
Season scallops with salt and pepper. In a medium size sauté pan, over high heat, add olive oil and garlic. When the garlic browns, add seasoned scallops and sear quickly on each side. Remove scallops and place on towel. Pull pan away from heat, add tequila, lime and parsley. Then cook liquid until it reduces by half. Remove from heat again and stir in butter. Season sauce with salt and pepper and pour over plated scallops. Serves 2.
