Carolina pulled pork sauce
From the Kitchen of the 225 Club

Barbecue sauces very throughout the South. Your basic Carolina pulled pork sauce is a thin, vinegary barbecue sauce that gets soaked up when you pour it over smoked pork. (We also have a mustard-base South Carolina barbecue sauce and a mayonnaise-based Alabama white barbecue sauce.)
 
This sauce was adapted from one given to us by world-class barbecue chef Andy Husbands who competes in barbecue cook-offs all over the country. He uses it to make his spectacular pulled-pork sandwich. However, you can pour it over a variety of your favorite different pork dishes.
  • ¾ cup white vinegar
  • 4½ teaspoons granulated sugar
  • 2 Tablespoons ketchup or favorite barbeque sauce
  • 1½ teaspoons kosher salt
  • 1 Tablespoon yellow mustard
  • 1 teaspoon freshly ground black pepper
Combine all ingredients and mix thoroughly. Pour into and airtight container and store in the refrigerator until needed. This step can be done several days in advance. Pour the sauce over warm sliced, chopped or shredded pork and toss well to cover all of the meat.
